Abstract: Traditional foods are very important components of people‟s diets and the basis of their dietary and nutritional habits. In Algeria, dates are an essential component of the diet in most regions, especially in Saharan areas. In order to preserve and enhance the diversity of these preparations, we wanted to bring our study on the determination of polyphenols and the evaluation of antioxidant activity by two measurement methods (DPPH, ABTS) by comparing two (traditional, industrial) preparations based on dates “Rob” from the Ghardaïa region. The total polyphenols contents are clearly variable between the two extracts. The traditional extract is generally richer than the commercial extract with a content of 345,71 mg/mL at 382,14 mg/mL. For antioxidant activity, the results of both techniques show that the commercial extract has the highest activity of an EC 50 =3,2 mg/mL and 3,2 mg/mL, followed by the traditional extract (EC 50 =4,5 mg/mL and 3,6 mg/mL) on the DPPH and ABTS test respectively. Based on these results, it is concluded that “Rob” is a traditional food rich in polyphenols, which are considered major antioxidants, beneficial for human health.
