dc.description.abstract | Saccharomyces cerevisiae is a microorganism of great importance in science and in food. Currently, various substrates are used for the production of this microscopic organism. Our study focuses on the production of this yeast from natural media such as discarded date juice or corn. We followed the growth of this yeast on these media using the Malassez cell. The results obtained showed that the natural environment of corn is favored compared to the environment of dates. Indeed, the growth of Saccharomyces cerevisiae on this medium reached a generation time G=2.13h and a growth rate µ=0.46h -1 . On the other hand, the values of these growth parameters obtained with the varieties of dates used are less important and are as follows: (Degla beida, G=4.89h; µ=0.20h -1 ), (Hamraya, G=4.94h; µ=0.20h -1 ), (Azerza, G=5.79h; µ=0, 17h -1 ) and (Ghars, G=5.94h; µ=0.16h -1 ). | EN_en |
